FIELD_REPORT: Sourcing at 1,400M in the Bali Highlands

The fastest way to lose the plot in specialty coffee is to buy everything off a spreadsheet. Origin names become abstractions, and the person who actually grew the coffee becomes a line item. Twice a year we run the supply chain in reverse: we leave the Wynwood roastery and fly to the highlands above Lake Batur to stand in the rows where NEO-KINTAMANI starts.

At 1,400 meters the air is thin and the mornings are cold, which is exactly what you want. Coffee cherries that mature slowly at altitude develop denser, more complex sugars — the raw material for the acidity and clarity that survive all the way into your cup. You cannot fake that with a roast curve. It has to be in the bean when it is picked.

Direct sourcing is not a marketing phrase for us; it is a set of relationships. We buy from a cluster of independent smallholders and a washing station that has processed for three generations. We pay above the commodity 'C' price, we pay it fast, and we pay it in a way the farmer can plan around. Fair credit transfer is not charity — it is what keeps the best cherry coming to us instead of to whoever shows up with a truck.

This trip we spent two days at the washing station watching the fermentation and the raised-bed drying. Small decisions there — how long the coffee ferments, how evenly it is turned on the beds — decide whether a lot cups clean or muddy months later in Miami. Being in the room means we can ask for the processing we want rather than accepting whatever the export container happens to hold.

We came home with the July Kintamani lot committed and two experimental micro-lots we are cupping for the ARCHITECT subscription. The distance between a volcano in Bali and an espresso bar in Wynwood is about nine thousand miles and, right now, roughly six weeks. Keeping that line honest is the entire job — and it starts with actually walking it.
